Banana Bran Muffin

This week’s recipe is a Banana Bran Muffin. This is a simple recipe that is only sweetened with maple syrup and bananas. Pack these for snacks, breakfast or sitting down with a hot cup of chai.

1 cup whole wheat pastry flour
1 cup wheat or oat bran
1 tsp. baking soda
½ tsp. ground nutmeg
½ tsp. cinnamon
1 cup vanilla or plain low-fat yogurt
¾ cup maple syrup
2 eggs
½ tsp. vanilla extract
½ cup walnuts, chopped
2/3 cup mashed bananas

Preheat oven to 350 degrees. Spray muffin tins and set aside.

Mix together the dry ingredients with a whisk in a small bowl. In a separate medium bowl, whisk together the yogurt, maple syrup, eggs and the vanilla extract. Add the dry ingredients to the wet ingredients and stir until almost combined. Gently fold in the mashed bananas and walnuts until combined.

Bake for 25-30 minutes or until an inserted toothpick comes out clean.
