Blackened Tofu on Caesar Salad

 This is a great and easy meal and I serve it with a good, warmed bread. Recipe yields several cups of blackened mixture; store in an airtight container. I use this mix on chicken and fish, too. I order organic bulk spices from Mountain Rose Gardens–cheap and fresh!

Extra firm tofu, cut into 1" cubes.
Blackened Mix
Canola oil

Coat tofu on all sides. Use a cast iron pan and coat it with some oil on a medium flame. Cook until tofu is nice and dark. Serve on a big Caesar salad.

Blackened Spice Mix

  • 1 cup Garlic Powder
  • 1 cup onion powder
  • 2/3 cup paprika
  • 1/3 cup cayenne
  • 2/3 cup oregano
  • 1/3 black pepper
  • 1/3 cup cumin
  • 2/3 cup lemon peel
  • 1/3 cup tumeric
  • salt
 
Caesar Dressing
  • 1 ½ olive oil/canola
  • 2 T white vinegar
  • anchovy paste
  • 2 garlic pressed
  • 3 T lemon juice
  • 2 T Dijon mustard
  • 2 t white pepper
  • ½ cup parmesan cheese
  • 2 hard-boiled eggs, chopped
Add all ingredients except eggs and whisk or blend in a blender. Stir in eggs.
