Rocking Taco Salad
Ingredients:
1 head of romaine or baby lettuce, clean and cut
2 lbs of ground turkey, chicken or wheat meat, seasoned
and cooked
2 packages of shredded non cheese or organic cheese, about 8 oz each
3 of your favorite organic tomatoes, cored and chopped
3 avocadoes, pitted, peeled and chopped
1 red onion, peeled and chopped
1 can of kidney beans, drained
1 can black olives, drained and chopped
1 to 2 C nacho chips
Dressing:
1 bottle of French salad dressing
1/2 C Italian salad dressing
How to Do It:
In a large bowl, combine first 8 ingredients.
In another bowl, whisk together French and Italian dressings; drizzle over salad.
Toss mixture until evenly coated.
Top with organic corn chips.
Apple and Beet Salad
Super Yummy and Healthy!
Ingredients:
2 shredded beets
1 green Apple
3 carrots
1/2 a head of red cabbage
Add
1 Tablespoon or more of lemon or lime Juice
2 Teaspoons plum vinegar
1 Tablespoon caraway seeds
2 Tablespoons olive oil
2 Chopped scallions
1/2 chopped red onion
Sea salt to taste.
How to Do It:
Mix all ingredients together and enjoy with good bread and maybe even a glass of wine.
Super Fast Carrot Salad
Ingredients:
6 cups grated carrots 1 cup raisins or dried cranberries
Dressing:
1/3 cup frozen orange juice concentrate, thawed
1/3 cup nonfat organic yogurt
1/3 cup nonfat organic sour cream
How to Do It:
In a large bowl add the carrots and raisins, mix well.
Pour the dressing over the carrot mixture, and toss to mix it up.
Cover the salad and chill for several hours or overnight before serving.
This Carrot Salad will serve 10 people!
