Making It Easy To Eat Green
Some believe our ancient ancestors ate up to six pounds of leaves per day. Can you imagine walking along, picking up and eating leaves all day? Dark green leafy vegetables are, calorie for calorie, perhaps the most concentrated source of nutrition of all food.
Offering a rich source of minerals (including iron, calcium, potassium, and magnesium) and vitamins, including vitamins K, C, E, and some B’s. Also providing a variety of phytonutrients including beta-carotene, lutein, and zeaxanthin, which protect our cells from damage and our eyes from age-related problems, among many other effects. Dark green leaves even contain small amounts of Omega 3 Fats.
Try eating some new greens to avoiding getting bored and give your body a wider variety of nutrients too!
Arugula (garden rocket) Beet greens (spinach beet)
Mustard greens Spinach Leaves

Flavors that go well with Greens:
· Smoky flavors
· Garlic
· Lemon
· Vinegar
· Hot chilies’, (dried pepper flakes, hot sauce, etc.)
· Anchovies
· Worcestershire Sauce
· Organic Dairy – Cream and/or cheese
Strawberry & Spinach Salad
Ingredients
1 Bag of organic spinach
A handful of pine nuts
2 cups of organic strawberries
2 ounces of organic
The Dressing
2 tbls lime juice
2 tbls honey (never feed honey to kids)
¼ tsp of ground ginger
3 tsp of safflower oil
How To Do It:
Toss spinach (you can tear it into smaller pieces if you prefer), strawberries, cheese, and pine nuts.
Whisk together dressing; pour over spinach mixture and toss just before serving. Serves Two
