Eating Clean, Healing From a Decade of Chronic Illness & a Simple Summer Beet Salad

My lifestyle is all about clean eating; enjoying fresh, whole and organic foods – not processed foods with ingredients you can’t pronounce. It’s about eating what makes you feel good. It’s not about eating bowls of kale every day because you’ve heard it’s good for you. And it’s not about being skinny. That’s not what being healthy is about. Being healthy IS about balance and happiness. I don’t put a label on myself; I’m not vegan or vegetarian or paleo. I eat what my body wants and what feels good, obviously steering clear of processed foods and incorporating lots of healthy fats in every meal along with protein and fiber. I eat clean because of my chronic health story and because my body reacts severely if I accidentally eat foods that don’t agree with me such as gluten, dairy, sugar and soy. When I removed these foods and starting eating organic, I felt amazing. It’s incredible what happens and how your perspective on life changes when you go through such a traumatic health experience alone. Eating clean can be very simple and it can be done with just a few minor changes.

Through my website, I write about the struggles I’ve faced the last few years, how I truly healed from a decade of chronic illness and how I work with clients on healthy eating and building back their immune systems. I also help people understand how Integrative Medicine can truly save your life; on my website I list out the tests you can get for internal inflammation that Western Medicine does not run. I also give guidance to clients when they’re getting never ending false negatives from Western medicine blood work tests, CT Scans, MRI’s, etc. (like I once did).

Was my journey back to health easy? Heck no. Did I miss out on my 20’s? Yes but, I don’t look at it that way. I learned a lot, quit my corporate job and now I am living my dream- my passion. My goal is to help others who are frustrated and exhausted with Western medicine and can’t get a diagnosis or are on pharmaceutical drugs to mask the symptoms and pain.

My goal is to let you know that I’m living proof you can heal. There is hope. There is an answer. Just breathe and remember to keep fighting until you get an answer because your answer IS out there.

Here’s a simple easy summer recipe that is full of antioxidants and can be tossed together in under 20 minutes. It’s perfect for an afternoon lunch or a side dish for dinner. Enjoy!

Simple Summer Beet Salad

Gluten-Free, Dairy-Free, Soy-Free, Sugar-Free, Grain-Free, Paleo, Vegan

Serves 4


  • 4 large beets, spiralized
  • 2 cups arugula
  • 2 mixed greens
  • 1 cup cherry tomatoes, halved
  • 2 Tbsp. finely chopped fresh basil
  • 1 Tbsp. finely chopped fresh cilantro
  • 3 Tbsp. sliced raw almonds
  • 2 large garlic cloves
  • Juice of 1 large lemon (1/4 cup fresh lemon juice)
  • 3-4 Tbsp. extra-virgin olive oil
  • Sea salt and freshly ground pepper, to taste


  1. In a large bowl, combine spiralized beets, arugula, mixed greens, cherry tomatoes, fresh basil, fresh cilantro and almonds. Set aside.
  2. Process the garlic in a mini food processor until minced. Add lemon olive oil, sea salt, pepper and pulse until well combined. Season to taste and pour dressing over salad mixture; toss to combine to coat the entire salad with dressing and serve.
