Last week, I had one of those no-brainer health revelations and it went something like this: hey, eating fresh fruits and vegetables in the morning made me feel way better during the day than say, a piece of toast covered in ketchup and melted cheese. Who would have thought?!

I am now inspired more than ever to take on a very simple mission: eat more fruits and vegetables, and eat them raw as much as possible.

Here is one effective way to do it: veggie tortilla wraps. They are simple, efficient, and pack a nutritional punch. Simply wrap chopped veggies in a flour tortilla, and add other seasonings and sauces to amp up the flavor: salsa, cream cheese, Vegannaise, Tahini sauce, Thai peanut sauce, plain yogurt, lemon juice, chopped garlic–the possibilities are nedless.

One of my favorite meals-to-go as a college undergrad was a Thai vegetable and tofu wrap that the campus eateries sold to students on the go in-between classes. It made me just full enough and didn’t give me the drowsy mental fog that would come from a slice of pizza or a burger with fries.

You can enjoy your own quick veggie wrap for your next lunch to power up for the rest of the day. To get you started, here are 7 veggie wrap recipes pulled from all over the internet. These gustatory possibilities really only represent the tip of the iceberg. 

 Tofu Veggie Wrap Recipe from Ratty Gourmet. Crunchy vegetables and tofu mixed with a spicy peanut sauce made from peanut butter, hoisin sauce, garlic salt and more all wrapped in a nice spinach tortilla.

Veggie Wrap with Tofu "Ranch" Dip from Going Places. Wrap up a veggie wrap with your favorite crunchy and crisp vegetables, and include inside a ranch dipping sauce that is actually made from tofu. Rocking.

California Veggie Wrap from Caboose. Veggies and tortilla–but also with some cream cheese spread, avocado and Monterey Jack cheese for an additional creamy texture that will go well with the crunch of alfalfa sprouts, carrots and bell peppers.
