Make a Frittata, Baby!

It’s great to have a “go to” dish that you can throw together with whatever you have in the refrigerator.  Let me introduce you to the Frittata!  The way I make a Frittata you can’t go wrong.  There’s no real recipe to follow, just four simple layers: bread, veggies, cheese, and an egg mixture.  There are so many combinations to try, you could have a Frittata once a week and never get tired of it.  If you’re on your own, it’s great because you have lots of leftovers to munch on.  If you’re feeding a crowd, there’s plenty for everyone!  If you’re vegan you can adapt with soy cheese, and an egg substitute.  If you’re a carnivore, you can add sausage.  You can have a Frittata for breakfast, lunch or dinner – it’s really flexible for anyone, anytime!
