Soup Recipe

I am currently working on a Body Ecology inspired cookbook and wanted to share this delicious soup with everyone.  Yummy!!!

Green Curry Soup
Cooked pureed soups are really easy to digest and a great way to get a lot of veggies in at one time. If I’m ever having digestive problems, I’ll do 3 days of just pureed soups and raw cultured vegetables.

2 yellow onions, chopped
2 heads of cauliflower
4 garlic cloves, roughly chopped
1 red bell pepper
2 large handfuls of fresh spinach
1 large bunch of kale, stem removed
2 tsp curry powder
2 Tbsp coconut oil
2 lemons, juiced (add more if you desire)
Sprinkle of cayenne pepper
1-2 tsp sea salt (to taste)

Lightly sauté onions, garlic, bell pepper, and curry powder in the bottom of a large stockpot with coconut oil. Add chopped cauliflower, and cayenne, and approximately 6 cups of water or broth (liquid should be about an inch below where the vegetables sit in the pot). Cover with lid and bring to a boil. Reduce heat to a simmer and add chopped kale and spinach. Keep covered and simmer until you can easily slice the cauliflower (but don’t over cook). Remove from head and add lemon juice and sea salt. Using either a hand blender or VitaMix, puree until smooth.
*Add a drizzle of pumpkin seed oil on top of each serving*

    Yum, this sounds delicious… I would add some chili paste because I like it hot and I think it would work with this recipe. I'll try it and let you know!

    Hello! I've been recently looking for yummy soup recipes and your Green Curry Soup is very interesting. I wish there's a photo…

    I believe the ingredients of your wonderful soup are healthy! I've been reading a lot lately and the set of ingredients appears to score high in my healthy-o-meter. :-)

    How could it not? You're using coconut oil! ;-) Just my two cents.
