Protect Yourself From Food Bourne Illnesses

Shortly thereafter there was a nationwide panic when Salmonella was found in grocery store chicken. With these various threats it is important to know what you’re dealing with and how keep yourself safe from salmonella and other food-borne illness. And it is especially important to us that you understand why you never have to worry about such contaminants in Wakaya Perfection products.

What exactly is Salmonella?

The FDA defines Salmonella as a group of bacteria that is the most common cause of food poisoning. Symptoms, including vomiting, diarrhea and fever, usually last 4-7 days and many can get better without treatment. However, symptoms can be more severe or lead to more serious illnesses in older adults, infants and those with chronic illnesses.

What are the sources and how do you prevent it from being in your food?

Salmonella is usually found in uncooked eggs, poultry and meat. It can also be found in unpasteurized milk, juice, cheese, raw fruits and vegetables, and spices that have been processed improperly.

The primary ways to avoid Salmonella are to make sure that your meat and egg products are thoroughly cooked. Salmonella is usually killed off at 165 degrees Fahrenheit. Also make sure to wash your hands properly before handling any raw food products, especially if you are interacting with animals or their treats beforehand. Germs can easily transfer from humans to the food, and if not heated properly can lead to Salmonella poisoning.

Be careful with your cooking utensils as well. Don’t use the same utensils to handle raw products that you do when your food is finally cooked. Check your labels and packaging for refrigeration protocols and follow them. Food that is not properly refrigerated before cooking can also carry the bacteria.

Ginger Masala Chai Worthy of a New York Winter

chai-tea-e-liquidI recently moved to New York City from California and am (ahem) “enjoying” my first real winter here. Let the wuss jokes begin!

It’s alright. I’m laughing at myself, too. Born and raised in California, used to being fairly tan, gets cold easily, loves sunshine so much she’s basically part lizard… Yep, that’s me. Now instead of donning a windbreaker for misty San Francisco mornings or wearing a hat for fun in the 60 degree Los Angeles winter sun, I’m learning the art of boots, down coats, ear muffs, long johns and mittens. Endless mittens. See you next April, world, because I am officially 75% clothing right now, and I can barely see over my scarf.

It’s going to be a long winter.

In all honesty, though, I love autumn and winter. I love the snow; I love the holidays; I love the feeling of warming up after being cold. It probably has something to do with a nesting instinct. One of the most beloved memories I have from childhood is making nests with my big sister on rainy days and sick days. When it was miserable, grey and raining outside, or when we were stuck in the house with colds and fevers, my sister would orchestrate a grand “nesting.” We’d pile tons of blankets and pillows on the ground, arranged in little cup-shaped seats like an egg carton. And then we’d hop inside the nest with a box of Nilla wafers and tea and watch a Disney movie to pass the time. Pure joy.

I still make nests of sorts, as does she, both literally and figuratively. Sans actual blankets and pillows, I just love making people feel warm, comfortable, and cared for. In any kind of weather, there’s little I love more than bringing people together around a table for delicious food and loving company. But this is a particularly important practice during the cold and dark months when our souls really need that extra swaddling. And many traditional winter recipes do the trick of warming us inside out.

Case in point, spice-infused recipes. This season you’re undoubtedly enjoying foods flavored with all kinds of spices, whether you know it or not. Butternut squash soup, gingerbread cookies, curries and stews, applesauce, etc. Winter recipes tend to incorporate many different spices, for several reasons. In Ayurveda, the winter season is associated with exacerbated Vata qualities, which are best assuaged through warming foods. This can be literally hot foods (like soup, hot cereal and warm drinks) and/or through warm-ing foods, made invigorating through the use of spice.

Even outside of Ayurveda, there’s a very practical reason to eat more spice during the winter. It’s cold, there’s a bug going around, you’re sniffly and sick…Voilà, spices curb cold and flu symptoms! Ginger, for instance, is an anti-inflammatory, anti-viral and anti-bacterial. It can help boost your immune system, loosen mucus, open your sinuses, and relieve sore throats. That’s a lot for one little root!

Keeping the health benefits in mind, as well as the essential need for warming and nesting that we all experience during this season, I offer you chai.

“Masala chai” is the Hindi term for a drink made with black tea, milk, and lots of spice. It is a drink that has been consumed in South Asia for centuries and is traditionally much less sweet and much more spicy than what you’d get at your local coffee shop. I can’t necessarily vouch for the total authenticity of my recipe, as I’ve never been to India, but I promise you won’t be disappointed!

Ginger Masala Chai

Makes 2 servings

Ingredients:

2 cups of milk (I like organic whole milk, but soy, almond, or oat work as well)

2 cups of water

3 tablespoons of loose leaf, unflavored black tea (the stronger the better; I like Darjeeling)

1/4 teaspoon Wakaya Perfection ground ginger

1/8 teaspoon ground cinnamon

pinch of saffron

2 whole, crushed up cardamom cloves

3 teaspoons of Turbinado sugar (or Agave, honey, etc)

Instructions:

Get two saucepans going on the stove on medium heat. Pour the milk in one and the water in the other. You’ll need to work in both pots simultaneously. As the milk begins to warm, add the pinch of saffron, pressing it between your fingertips gently before dropping it in the saucepan.

Once the water in the other pot begins to boil, add the loose tea leaves and reduce to a low simmer. Let steep 3-5 minutes. While you’re waiting, add the sugar to the milk and stir until it dissolves. Once the tea is ready, place a strainer over the milk and strain the tea water into the milk saucepan. Now you’re working in just one pot.

Start building the spice. Add the ginger, cinnamon and any other spices you want to the pot, saving the cardamon to the side for the end. You can try the chai to see if it has the right spice/sugar ratio, and adjust until it’s just right. Bring the pot to a boil, and as it begins to bubble up, throw the cardamon in and turn the heat off right away. The chai will stew for a second, cooling down slightly, and the cardamon will infuse the drink just enough without overpowering it.

Serve in two mugs and enjoy! Stay warm, everyone!

Two Recipes to Personify the Winter Season

Screen shot 2013-12-09 at 11.19.44 PMThere are so many things to love about winter: soft, fluffy scarves to bundle up in, holidays to celebrate with loved ones, and of course all the many traditional dishes filled with hearty ingredients and warm spices.

The ingredient that personifies this time of year more than any other for me is ginger.  It’s a spicy spice in the best kind of way one that warms you from the inside out.  It works in everything from a Thanksgiving cranberry chutney recipe to a simple herbal tea.  And ginger is not just about flavor and spice, it’s also one of the most well studied herbs in botanical medicine, with an impressive body of research to support its use for a variety of health conditions including improvement in muscle and joint pain, nausea due to pregnancy or chemotherapy and a variety of other conditions where inflammation plays a role (which is almost everything).

Fun fact: Dried ginger is ten times more healing than fresh

Here are a couple recipes with ginger that I love to make this time of year:

Simple Ginger Tea

I make this tea when I’m feeling cold and a bit lazy.  It leaves me feeling instantly warm and healthy.

  • Thoroughly wash a chunk of fresh ginger rhizome (root) and use a carrot grater to remove the outer skin
  • Slice lengthwise into two or three thick pieces and add one to two slices to a cup of very hot water or tea (green or raspberry leaf are some of my favorite choices)
  • Steep for 3-4 minutes and enjoy

Superfood Muesli

I’ve modified this recipe from one I was introduced to while in naturopathic medical school.  I love it because you can make a big batch that will last for weeks and it’s fun to get creative with different spices and ingredients.  Although this dish can be eaten warm or cold, I like to warm it up in the winter for a stick-to-your-ribs breakfast that provides excellent whole-food nutrition and energy.

Ingredients:

  • 4 cups rolled grains (e.g. oats, rye, barley, and/or rolled rice flakes)
  • 2 cups oat bran
  • ½ cup dried, unsulphured fruit (e.g. raisins, dates, blueberries, cranberries)
  • 1 cup sunflower seeds and/or pumpkin seeds (can be ground)
  • 1 cup raw nuts (e.g. walnuts and almonds)
  • 1 cup seeds (e.g. ground flax seed, chia)
  • 1 tsp each of one or more of ground ginger

Combine all ingredients, mix well and store in an airtight container for up to two weeks.  To make a single serving, scoop a ½ cup into a bowl and add 1 cup liquid (e.g. water, nut milk or dairy milk are all good options).  Soak overnight and then heat in microwave in the morning or, to prepare right away, heat in a saucepan until grains are soft and ingredients have absorbed all the liquid.

Thanksgiving Recipe: Curried Squash & Apple Soup

43 Final DishThis soup was inspired by a delicious dish my Aunt Joan made of roasted curried squash. I adored it, so recreated it, then decided to make it into a soup. It’s fabulous for chilly fall nights, when you’re looking for something to warm your belly and soul, and it’s super easy! It also makes a great addition to your Thanksgiving dinner, especially for your vegan and gluten free guests.

I’m not one for precise measurements as one of my favorite aspects of cooking is experimentation, so I encourage you to play with the flavors and find what works best for you. Feel free to share any magical discoveries in the comments below!

Ingredients

– 1 butternut squash, peeled and cut into cubes

– A couple green apples, peeled, cored, and quatered

– 1 small yellow onion and/or shallots

– carton of veggie broth (homemade is great too of course!)

– 2 tsp of Wakaya Perfection Ginger

– grapeseed oil or olive oil

– curry powder (the best kind you can find, which will probably be at an Indian or West Indian store)

– ground cumin or roasted geera

– salt and pepper to taste

These are my favorite brands of roasted geera and curry powder, both purchased from a West Indian store in Toronto. Having delicious and authentic curry powder can make all the difference!

Instructions

Heat oven to 400 degrees.

In a large mixing bowl, toss together the squash, apples, and onion/shallots, with oil (enough for a light coating) and a decent coating of curry powder (about 1 – 2 Tbsp) and about 1 tsp of the roasted geera/cumin. Add a sprinkle of salt and pepper.

Place ingredients in a baking dish, and roast in oven for about 40 minutes, removing half way to stir. Squash should be very soft when complete.

Add the roasted veggies to a good quality blender. Add the Wakaya Perfection ginger and about a cup of veggie broth to begin. Begin blending on a low setting and keep adding veggie broth until you reach your desired consistency (it will depend on your preference and how large of a squash you used). Taste and adjust seasonings as desired.

Have as a starter, or make it meal by serving with a scoop of brown rice and a mixed green salad. Enjoy!

The Superfood Ginger Roasted Cauliflower (Recipe)

Cauliflower is one of the world’s healthiest foods and with only 26 calories per cup, this power house vegetable not only packs a nutrient punch but will also help keep your waistline slim. Cauliflower is not only low in calories but also provides you with an array of antioxidants, anti-inflammatories and fiber. No wonder I was salivating when I walked by the cauliflower. My body was craving all the nutrients in this amazing vegetable. If you just allow your body to speak to you, it will tell you what it really needs in order to feel good. I’m not talking giving in to the mind’s idea of cravings but the body’s idea of cravings. You know what I’m talking about. If I listen to my mind, I would consume cookies for breakfast, lunch and dinner but if I listen to my body, it tells me what I need to eat.

Since I was recovering from being sick, my body was craving Vitamin C. It wasn’t until I looked into the nutrients of cauliflower did I realize there was 86% of the daily recommended vitamin c in one cup of cauliflower! This vegetable is amazing. You can use it to make an amazing soup, substitute it for mashed potatoes or even roast it.

Want to boost your immune system even more? Pair cauliflower with ginger. Ginger is an amazing anti-inflammatory spice. A little bit goes a long way to helping you alleviate arthritis, nausea, or detox when you have the flu or cold. And so I listened to my body as it craved vitamin C and other anti-inflammatories and came up with this amazing recipe. Thanks to Wakaya, I was able to create this amazing roasted cauliflower dish.

Ginger Roasted Cauliflower

Serves 4 side dishes or 2 main dishes

1 head cauliflower, trimmed and cut into florets

1 tablespoon of olive oil

1/2 teaspoon of Wakaya Ground ginger

1/4 teaspoon salt

  1. Heat oven to 375 degrees
  2. Put all ingredients in a baking sheet sprayed with olive oil
  3. Roast for 25-30 minutes

Of course, it made the list because it’s a powerful sinus and chest decongestant, encourages breathing by opening up airways, and relieves achy and sore muscles. It’s easy to use and available fresh or as an essential oil. You can simply smell the oil, make a homemade vapor rub (minus the petroleum), massage the essential oil into your legs or sore areas, or add it to a hot bath. One of my favorite ways to enjoy eucalyptus is a drinking a fresh eucalyptus martini (I told you natural remedies could taste good too)!

4. Dilo Cream

If you haven’t heard of dilo cream, you’re not alone. Sparks Will Fly With This 4th of July Homemade Ice Cream!

By the time 4th of July rolls around, we’re in the thick of summer. It’s hot; our kids are getting restless; and it’s been a few weeks since the last good summer party. Lucky for us, the joyous, rowdy national holiday arrives just in time, complete with parades and fireworks to set the festive mood. Like many celebrants, you may be hitting the beach or the park this year for a picnic, then catching fireworks once the sun sets. It’s a common and beloved routine, so perfectly simple you might find yourself searching for a way to spice things up…

Ever made ice cream from scratch? That’s right, no more excuses. Let this summer be an opportunity to undertake some new projects you’ve had your eye on but haven’t had the time/patience to try out. Case in point: homemade ice cream!

Ginger and peaches come together in this refreshing recipe to create the perfect summer dessert. Your kids will love it; your friends will beg you for the recipe; and Independence Day will go off will all the spice and spark it deserves.

Ginger Peach Ice Cream – Two ways

Ingredients:

  • 6 fresh ripe peaches diced
  • 1 Pint Heavy Cream or whipping cream
  • 1-2 Cups Half and Half or Whole Milk
  • 1/2 to 1 Cup sugar depending on preference
  • 1/2 to 1 1/2 tsp. Wakaya Perfection Organic Ginger Powder (to taste)

Instructions:

  1. Lightly whip heavy cream to aerate for 2-3 minutes
  2. Add sugar to blend
  3. Pour into a large bowl and add additional milk
  4. Puree half of the diced peaches and add ginger powder to taste
  5. Stir in diced peaches and puree until well blended
  6. Pour into ice cream maker and follow manufacturer’s instructions

Or have some fun and make Ice Cream in a Can!! Here’s how:

In a 1 lb. coffee can mix all ingredients. Seal can lid well with duct tape. Put small, sealed can inside larger 3 lb. can. Pack ice and 1 cup salt around small can. Put lid on large can and duct tape closed. Roll back & forth on a large towel (optional) for 15 minutes. Open large can and dump ice and water. Wipe small can dry and open. Stir mix, scraping sides of can. Additional ingredients, eg. cookie crumbs, chopped nuts, can be added now. Reseal small can and place back in larger can. Repack with salt and ice. Continue rolling for 10 minutes more. Open large can and dump ice and water. Wipe small can dry and open. Enjoy!
