Ginger Masala Chai Worthy of a New York Winter

chai-tea-e-liquidI recently moved to New York City from California and am (ahem) “enjoying” my first real winter here. Let the wuss jokes begin!

It’s alright. I’m laughing at myself, too. Born and raised in California, used to being fairly tan, gets cold easily, loves sunshine so much she’s basically part lizard… Yep, that’s me. Now instead of donning a windbreaker for misty San Francisco mornings or wearing a hat for fun in the 60 degree Los Angeles winter sun, I’m learning the art of boots, down coats, ear muffs, long johns and mittens. Endless mittens. See you next April, world, because I am officially 75% clothing right now, and I can barely see over my scarf.

It’s going to be a long winter.

In all honesty, though, I love autumn and winter. I love the snow; I love the holidays; I love the feeling of warming up after being cold. It probably has something to do with a nesting instinct. One of the most beloved memories I have from childhood is making nests with my big sister on rainy days and sick days. When it was miserable, grey and raining outside, or when we were stuck in the house with colds and fevers, my sister would orchestrate a grand “nesting.” We’d pile tons of blankets and pillows on the ground, arranged in little cup-shaped seats like an egg carton. And then we’d hop inside the nest with a box of Nilla wafers and tea and watch a Disney movie to pass the time. Pure joy.

I still make nests of sorts, as does she, both literally and figuratively. Sans actual blankets and pillows, I just love making people feel warm, comfortable, and cared for. In any kind of weather, there’s little I love more than bringing people together around a table for delicious food and loving company. But this is a particularly important practice during the cold and dark months when our souls really need that extra swaddling. And many traditional winter recipes do the trick of warming us inside out.

Case in point, spice-infused recipes. This season you’re undoubtedly enjoying foods flavored with all kinds of spices, whether you know it or not. Butternut squash soup, gingerbread cookies, curries and stews, applesauce, etc. Winter recipes tend to incorporate many different spices, for several reasons. In Ayurveda, the winter season is associated with exacerbated Vata qualities, which are best assuaged through warming foods. This can be literally hot foods (like soup, hot cereal and warm drinks) and/or through warm-ing foods, made invigorating through the use of spice.

Even outside of Ayurveda, there’s a very practical reason to eat more spice during the winter. It’s cold, there’s a bug going around, you’re sniffly and sick…Voilà, spices curb cold and flu symptoms! Ginger, for instance, is an anti-inflammatory, anti-viral and anti-bacterial. It can help boost your immune system, loosen mucus, open your sinuses, and relieve sore throats. That’s a lot for one little root!

Keeping the health benefits in mind, as well as the essential need for warming and nesting that we all experience during this season, I offer you chai.

“Masala chai” is the Hindi term for a drink made with black tea, milk, and lots of spice. It is a drink that has been consumed in South Asia for centuries and is traditionally much less sweet and much more spicy than what you’d get at your local coffee shop. I can’t necessarily vouch for the total authenticity of my recipe, as I’ve never been to India, but I promise you won’t be disappointed!

Ginger Masala Chai

Makes 2 servings

Ingredients:

2 cups of milk (I like organic whole milk, but soy, almond, or oat work as well)

2 cups of water

3 tablespoons of loose leaf, unflavored black tea (the stronger the better; I like Darjeeling)

1/4 teaspoon Wakaya Perfection ground ginger

1/8 teaspoon ground cinnamon

pinch of saffron

2 whole, crushed up cardamom cloves

3 teaspoons of Turbinado sugar (or Agave, honey, etc)

Instructions:

Get two saucepans going on the stove on medium heat. Pour the milk in one and the water in the other. You’ll need to work in both pots simultaneously. As the milk begins to warm, add the pinch of saffron, pressing it between your fingertips gently before dropping it in the saucepan.

Once the water in the other pot begins to boil, add the loose tea leaves and reduce to a low simmer. Let steep 3-5 minutes. While you’re waiting, add the sugar to the milk and stir until it dissolves. Once the tea is ready, place a strainer over the milk and strain the tea water into the milk saucepan. Now you’re working in just one pot.

Start building the spice. Add the ginger, cinnamon and any other spices you want to the pot, saving the cardamon to the side for the end. You can try the chai to see if it has the right spice/sugar ratio, and adjust until it’s just right. Bring the pot to a boil, and as it begins to bubble up, throw the cardamon in and turn the heat off right away. The chai will stew for a second, cooling down slightly, and the cardamon will infuse the drink just enough without overpowering it.

Serve in two mugs and enjoy! Stay warm, everyone!

The Superfood Ginger Roasted Cauliflower (Recipe)

Cauliflower is one of the world’s healthiest foods and with only 26 calories per cup, this power house vegetable not only packs a nutrient punch but will also help keep your waistline slim. Cauliflower is not only low in calories but also provides you with an array of antioxidants, anti-inflammatories and fiber. No wonder I was salivating when I walked by the cauliflower. My body was craving all the nutrients in this amazing vegetable. If you just allow your body to speak to you, it will tell you what it really needs in order to feel good. I’m not talking giving in to the mind’s idea of cravings but the body’s idea of cravings. You know what I’m talking about. If I listen to my mind, I would consume cookies for breakfast, lunch and dinner but if I listen to my body, it tells me what I need to eat.

Since I was recovering from being sick, my body was craving Vitamin C. It wasn’t until I looked into the nutrients of cauliflower did I realize there was 86% of the daily recommended vitamin c in one cup of cauliflower! This vegetable is amazing. You can use it to make an amazing soup, substitute it for mashed potatoes or even roast it.

Want to boost your immune system even more? Pair cauliflower with ginger. Ginger is an amazing anti-inflammatory spice. A little bit goes a long way to helping you alleviate arthritis, nausea, or detox when you have the flu or cold. And so I listened to my body as it craved vitamin C and other anti-inflammatories and came up with this amazing recipe. Thanks to Wakaya, I was able to create this amazing roasted cauliflower dish.

Ginger Roasted Cauliflower

Serves 4 side dishes or 2 main dishes

1 head cauliflower, trimmed and cut into florets

1 tablespoon of olive oil

1/2 teaspoon of Wakaya Ground ginger

1/4 teaspoon salt

  1. Heat oven to 375 degrees
  2. Put all ingredients in a baking sheet sprayed with olive oil
  3. Roast for 25-30 minutes

5 Natural Remedies for Your Medicine Cabinet

If you consider yourself health conscious, you’re probably fed-up of using pharmaceutical medicines to ease every little ache, pain, or skin issue. In addition to all the chemical ingredients that make up conventional medicines (good luck trying to pronounce the names, let alone spell them), using lab created remedies leave you open to a plethora of unpleasant side effects. The great news (that we often forget about) is that Mother Nature has always had our back when it comes to combating many common health issues. While you might not be able to replace all your pharmaceutical meds right away, there are many easy, affordable, and all natural (really natural, not natural flavoring natural) remedies that can help you clean up your medicine cabinet. And the best part is that most natural remedies treat more than one ailment – so you’re not buying one remedy for every symptom (plus natural remedies often smell good, taste good, and are less expensive than the factory made medicines).

Lucky for us, there are many natural remedies available, but the following are my top 5 picks you need to know about:

1. Ginger

Ginger is a natural remedy powerhouse. This root plant boosts immunity, relieves nausea and motion sickness, has anti-inflammatory properties, increases metabolism which assists weight loss, aids in digestion, improves circulation, increases insulin sensitivity, and opens up the sinus passages. Ginger is available fresh, in powder, and pill form (such as Wakaya Perfection’s Ginger-Eze.) You can make a simple ginger paste to apply directly to your skin, take a daily pill (a homeopathic doctor prescribed this to me years ago to improve my circulation), or try some delicious ginger recipes (ginger tea and cookies perhaps?).

2. Bee Propolis

Propolis is a sticky resin used by bees to keep their hive together and protect it from outside dangers. Typically honey has trace amounts of bee propolis, but you can buy pure propolis as a liquid to ingest orally or directly put on your skin to treat minor cuts or sores. If you choose to take it orally (that’s how I always use it), it does have a strong taste so you might want to mix it with quality honey. I don’t travel without bee propolis and I always take it at the first sign of a cold.

3. Eucalyptus

Eucalyptus is one of my favorite refreshing scents. Of course, it made the list because it’s a powerful sinus and chest decongestant, encourages breathing by opening up airways, and relieves achy and sore muscles. It’s easy to use and available fresh or as an essential oil. You can simply smell the oil, make a homemade vapor rub (minus the petroleum), massage the essential oil into your legs or sore areas, or add it to a hot bath. One of my favorite ways to enjoy eucalyptus is a drinking a fresh eucalyptus martini (I told you natural remedies could taste good too)!

4. Dilo Cream

If you haven’t heard of dilo cream, you’re not alone. Dilo cream is made from the oil of the dilo tree – called the tree of a thousand virtues – which only grows close to ocean water in the Pacific and tropical regions of Africa. 5 Classic American Dishes Made Healthy for 4th of July!

The 4th of July is no exception. This is a day many Americans spend grilling meat and veggies, squeezing lemons for lemonade, and making blueberry pancakes and apple pie. Because what better way to celebrate independence than to merrily flip hot dogs on the grill, surrounded by friends and family? It’s a bit of a stereotype, perhaps, but we’ll bet many of you have had at least one, if not many, Independence Days that exactly fit that bill.

The unfortunate reality is that many of the “classic American dishes” we enjoy on this and other holidays are not all that healthy, and some are downright vicious to our health. Luckily, there are ways to make some of these beloved recipes more healthy so that you and your family can enjoy an Independence Day feast without worrying about the consequences.

Here are 5 of our favorite recipes:

  1. For Breakfast: Eating pancakes for breakfast is kind of like having dessert in the morning, but it is a holiday, after all. To ease your mind a bit, these delicious blueberry lemon pancakes are made with half white flour and half whole wheat flour, which will at least add some fiber to balance out the 2 tablespoons of sugar. Enjoy with maple syrup, jam, butter, or just one their own!
  2. For Lunch: After that yummy, but heavy, breakfast you may want something light and green to munch on for lunch. Potato or pasta salad is typically the go-to picnic dish, but since we’re already enjoying lots of carbs and starch for breakfast and dinner, opt for something with more fiber. This kale slaw is the perfect choice for a light, refreshing midday meal.
  3. For Dinner: There’s perhaps no dish more classically American than a burger and fries. But this year, instead of wasting the calories on meat, cheese, and a big bun, get creative with this amazing veggie burger recipe. Lentils, mushrooms, and walnuts provide the main substance of the dish, packing lots of protein, fiber, and potassium. Serve these burgers with mustard, whole wheat buns, and sweet potato fries for something classically delicious and blessedly worry-proof.
  4. For Refreshments: It’s summer, it’s hot, you’re thirsty – you’re going to want something delicious and cool to sip throughout the day. Instead of buying juice or soda from the supermarket, make your own fresh-squeezed lemonade! It’s the only way you can control how much and what kind of sugar goes into sweetening your tasty beverage. This recipe calls for 4 cups of sugar, but try using maple syrup, coconut sugar, date sugar, or stevia as alternatives.
  5. For Dessert: Ice cream, ice cream, we all scream for ice cream! Ginger, peaches, and the sweet coolness of a dessert you can savor as fireworks paint the sky above you. Try out this recipe and be prepared to never eat another flavor of ice cream again.

Sparks Will Fly With This 4th of July Homemade Ice Cream!

By the time 4th of July rolls around, we’re in the thick of summer. It’s hot; our kids are getting restless; and it’s been a few weeks since the last good summer party. Lucky for us, the joyous, rowdy national holiday arrives just in time, complete with parades and fireworks to set the festive mood. Like many celebrants, you may be hitting the beach or the park this year for a picnic, then catching fireworks once the sun sets. It’s a common and beloved routine, so perfectly simple you might find yourself searching for a way to spice things up…

Ever made ice cream from scratch? That’s right, no more excuses. Let this summer be an opportunity to undertake some new projects you’ve had your eye on but haven’t had the time/patience to try out. Case in point: homemade ice cream!

Ginger and peaches come together in this refreshing recipe to create the perfect summer dessert. Your kids will love it; your friends will beg you for the recipe; and Independence Day will go off will all the spice and spark it deserves.

Ginger Peach Ice Cream – Two ways

Ingredients:

  • 6 fresh ripe peaches diced
  • 1 Pint Heavy Cream or whipping cream
  • 1-2 Cups Half and Half or Whole Milk
  • 1/2 to 1 Cup sugar depending on preference
  • 1/2 to 1 1/2 tsp. Wakaya Perfection Organic Ginger Powder (to taste)

Instructions:

  1. Lightly whip heavy cream to aerate for 2-3 minutes
  2. Add sugar to blend
  3. Pour into a large bowl and add additional milk
  4. Puree half of the diced peaches and add ginger powder to taste
  5. Stir in diced peaches and puree until well blended
  6. Pour into ice cream maker and follow manufacturer’s instructions

Or have some fun and make Ice Cream in a Can!! Here’s how:

In a 1 lb. coffee can mix all ingredients. Seal can lid well with duct tape. Put small, sealed can inside larger 3 lb. can. Pack ice and 1 cup salt around small can. Put lid on large can and duct tape closed. Roll back & forth on a large towel (optional) for 15 minutes. Open large can and dump ice and water. Wipe small can dry and open. Stir mix, scraping sides of can. Additional ingredients, eg. cookie crumbs, chopped nuts, can be added now. Reseal small can and place back in larger can. Repack with salt and ice. Continue rolling for 10 minutes more. Open large can and dump ice and water. Wipe small can dry and open. Enjoy!
